Are you planning to have friends and family over for breakfast or brunch?  Here is a perfect recipe for you from Friendship Club’s 2010 Cookbook “Recipes Old & New”.  Easy and prepared the night before.  Just pop it in the oven the next morning.  What can be easier? You are free to visit with friends and family while the Breakfast Omelet bakes in oven.

18 eggs                1/4 cup green onions, sliced

1 cup milk                  2 cups shredded cheese

1 cup sour cream                            1 tsp. salt

2 cups meat (ham, crumbled cooked

    bacon or cooked sausage)

Combine eggs, milk, sour cream, meat, green onions, shredded cheese and salt the night before. Refrigerate. Next morning melt margarine or butter in a 9x13” glass pan.  Pour in egg mixture. Bake 40 to 50 minutes at 325 degrees.
